Vacation At Sg Madek, Kahang (Reserved Forest) Part 2

Such beautiful morning view from our camp site. I simply enjoy sitting in the middle of this route to watch whatever crossing this area. I actually saw some wild boar, civet (musang), gigantic palawan hornbill flying over my camp site and some amazing animal foot prints. *wink*

For breakfast, I made some tuna sandwiches & some simple Chinese style pancake (with eggs) for everyone. The pancake is really delicious. Everyone is asking for more but I have no time to prepare an extra batch cause I'm off to go fishing with hubby at the other site of the river. Need a short walk deep into the forest. Oh well, anything can happen...you know ! So, hubby & I are both well prepared and off we go.

Now, this is the fishing spot where hubby love the most. We are well prepared especially leeches. Hubby helps to rub both of my legs with 999 soap which works very well to prevent leeches from climbing up to our legs. We went in here once in the morning and also once at night time....just the two of us. >o< And by surprise that night..... we have a bunch of visitors opposite our fishing spot. About 5-6 beavers appeared looking for food around the river here. They making loads of noise (very very noisy like market place) and suddenly stopped there once they saw us sitting infront of them. hahaha...... Then they quickly swam into the river and disappeared. I am having so much fun watching their reaction. LOL.

SEE....hubby bought me this shoes. Its cheap, comfortable & heavy duty.

This is one of the fallen tree nearby and this is the head.

And this is the other site of the tree. We actually heard some weird noises coming from behind there that morning. I climbed up to this tree and walk all the way up to see what's behind us. But couldn't see anything. Hubby said most probably is wild boar digging for worms.

 I  found an interesting durian in the middle of the forest. The smallest durian in town.

Here's hubby best catch of the day. He caught a 1.3kg of sebarau (Hempala) that morning.

And this is my best catch of the day. A wild cat foot print. Not sure what species....but it's good enough to make my day.

Petai (stink beans) is in season again and many of  the local orang asli went in to pick up petai these few weeks. The petai tree is extremely tall and it's suddenly not an easy task at all. They are risking their lives to get these wild beans. He said there's one of their member fell from the tree two months ago and found dead on the spot. :o(

Vacation At Sg Madek, Kahang (Reserved Forest) Part 1

I'm finally back from my vacation. There were two weeks school holiday during Hari Raya. So, taking this opportunity to travel with hubby alone. We went for a 3 days 2 night stay on our first trip for the first week and then back again on the second week for another 3 days 2 night stay. There were 6 of us on our first trip and only 4 persons (without the kids) on our second trip. Best vacation I ever had so far. Hubby said it's our honeymoon trip. LOL. >o<

This is where about we were staying for the past few days. The river up stream.

These guys came in for a one day fishing trip on the second day of our stay, with their boat but didn't get anything on that day.

The river down stream. Very beautiful environment. I really enjoyed myself here especially during night time. The night sky is totally cover with stars.......such amazing view. How I wish to take down the picture. But loads of weird noises coming from all over. Are you daring to stay here?

My boy having the best fishing time nearby. He is too a wildlife lover...just like his dad.

Hubby built me a personal staircase. So sweet of him. 

ME....enjoying myself with the natural fish foot spa pedicure....down at the river side. You have no idea...how fun it was !

Here's my 5 STAR hotel room...... hehe....

We rescued a water monitor (biawak) on the second day of our first trip. The water monitor (biawak) was stuck in the fishing cage for at least 2 weeks time already. It was tired & frustrated.

The evening catch of the day. I'm chilling out at the middle of the route with hubby. So relaxing ! Stay tune for another best catch of the day on my second trip.

Vegetarian Suzhou Mooncake From Scratch

This Suzhou style mooncake is actually inspired by one of Fiona @ Life of Nanchang Lu blog post. I've been planning to make this since last mooncake festival but always too busy to get everything gathered or to even started it. Oh well, I finally get it done this year. Hooray..... It such an awesome experience....baking without any recipe given! And just by estimation, however, the fillings turned out quite satisfying but still a little bit more adjustment need to be done. Maybe I will try the other flavour as well, the sweetened nutty seaweed fillings. Sounds a bit weird but I love weird stuffs. haha.....

So, here's what I did.
Ingredients for pastry crust :
130gm  bread flour
100gm  all purpose flour
4 TB sugar
100gm butter, chopped
70ml   water

150gm   all purpose flour
100gm  shortening

*egg glazing ~ 1 egg yolk + 1 tspn milk

Method :
(1) for ingredients (A), combine flour & sugar and mix well then rub in butter till well combined.
(2) now, stir in water till mixture became soft dough then set aside to rest for 30 mins.
(3) at the same time, combine ingredients (B) to form a dough ball then divide into 10 portions.
(4) on the other hand, divide ingredients (A) into 10 portions as well.
(5) wrap (B) dough into (A) dough, nicely sealed and then follow the rolling method from here.
(6) cut dough into 2 portions, press center of one dough then fold in both side and press to flatten dough.
(7) now, roll dough into round shape and then wrap in the filling and sealed nicely.
(8) place pastry to baking tray lined with greaseproof paper.
(9) slightly press pastry to flatten it and then brush on egg glazing.
(10) finally, bake at preheated oven 200-210'C for about 30 mins or till brown.

Ingredients for black sesame fillings :
100gm  black sesame seeds powder, roasted
150gm  cooked glutinous rice flour (koh fun)
100gm   sugar
50gm   roasted sesame seeds
1 cup   roasted walnuts, chopped
1/2 cup  roasted pistachio
1 cup   hot water (adjustable)

Method :
Combine black sesame seeds powder, koh fun, sugar & sesame seeds into a big bowl and mix well. Stir in hot water little by little till form a nice paste (do not add in all if possible). Then add in walnuts & pistachio and knead till everything well combined. Finally, divide mixture into 20 equal portions.

I simply adored this fancy Suzhou style mooncake. It gives me such incredible experience to start making more delicious mooncakes in future. Looking forward to more inspirations coming from all over. Enjoy & have fun !

Apple & Nectarine Strudel With Chinese Pastry Crust

If not mistaken, this is the third time I'm making an apple strudel for the past few years. :o) The first & the second time was two years back by using the homemade pastry puff. Pastry puff is much lighter compare to any other layering pastry. But I'm quite curious about the Chinese pastry as well. I wonder how it would turned up between the two combination. Sounds a bit funny, right? Oh well, never try never know ! >o<

Ingredients for Pastry Crust :
Dough (A)
150gm   bread flour
100gm   all purpose flour
10gm    custard powder
100gm  cold butter, chopped
4 TB  sugar
90ml  water

Dough (B)
150gm  all purpose flour
100gm  shortening

*1 egg yolk + 1 tspn milk (for glazing)
  a handful of sesame seeds

Method :
(1) for ingredients (A), combine both flour, custard powder& sugar into a big bowl. Then rub in butter till well mixed like bread crumb.
(2) now, stir in water to form a soft dough and set aside to rest for 30 mins.
(3) for ingredients (B), just combine the ingredients and mix to form a dough.
(4) now, wrap ingredient (B) into (A) and seal nicely.
(5) place dough to a slightly floured working table, roll it flat to about 9x14" size and fold it into three. Just like making danish bread & pastry puff where you can refer here.
(6) finally, roll dough into a bigger size pastry skin for about 10x18" length and place it to baking tray lined with grease proof paper.

Ingredients for fillings :
2 large nectarine, sliced
2 large green apples, diced
1 cup  brown sugar
2 tspn cinnamon powder
3 TB  all purpose flour
1/2 cup  raisins (optional)
(combine everything & mix well)

(7) spread fillings to pastry skin then wrap it nice & neat.
(8) next, brush the top with egg glazing & sprinkle on the sesame seeds.

(9)  finally, bake at preheated oven 200-210'C for about 30 mins or till brown & crispy.
(10) cool for 10 mins before slicing it.

Hmmm.....yummm......who can resist such crispy crust. You can actually hold it on your hand and eat but not the western pastry crust. Slurppp.... Coffee or tea anyone??? Hope you guys will love it too.
