Chocolate Filled Lemony Brioche

Today, I'm introducing you to my favourite Lady Brioche. Here's Miss Chocolate Filled Brioche! She' s a beauty and smell like buttery lemon CHANEL No. xoxo. She loves to wear snowy white flowy coat (probably ZANG TOI she's wearing). She's such a HOTTIE & heart melting babe. I wonder what brand of lipstick she's wearing! She's probably wearing JIMMY CHOO's high heels too. I love the way she is. I wonder does she looks seducing to you too! ^_^

And here is where she came from.....

Ingredients :
1 cup full cream milk
1/4 cup sugar
4 eggs
3-3/4 cups bread flour
1 tbsp instant yeast
1-1/2 tpsn salt
200gm butter, softened
2 tbsp lemon rind

*some icing sugar for topping
* for fillings : 1 cup chopped cadbury milky bar & 1/2 cup chocolate chips

Method :

(1) combine all ingredients together to form a sticky dough.
(2) cover and keep refrigerated overnight.
(3) place dough to a floured working table and divide into 2 portion.
(4) roll out flat into rectangle shape.

(5) sprinkle chopped chocolate & chocolate chips onto flattened dough.
(6) then fold dough into three and cut into size as desired.
(7) let to rest for an hour and then brush with egg glaze.
(8) finally, bake at 175-180'c for about 20 mins.
(9) sprinkle a dash of icing sugar just before serving.

Millet & Glutinous Rice Citrus Muffin

I don't remember when is the last time I made muffins or cupcakes. But I love trying something new everyday. Lately, I am reading something about gluten-free and have learned a lot from there. Plus, my tummy isn't feeling well these days maybe because of the digesting system. So, planning something gluten-free for myself.

And here's what I did.

Ingredients :

1 cup glutinous rice flour
1 cup plain rice flour
1/2 cup millet flour
4 tbsp sugar (omit this if you're using bottle juice)
1 tbsp baking powder
1/2 tspn salt
1 egg, lightly beaten
1 cup fresh key lime juice (or any juices)
1/4 cup honey
1/4 cup corn oil/olive oil
1/2 cup candied/preserved shredded nutmeg

Method :
(1) combine all dry ingredients (except nutmeg) into a big mixing bowl.
(2) stir in the wet ingredients and mix untill well combined.
(3) add in candied nutmeg and mix well.
(4) pour batter to cupcake tray lined with paper cups.
(5) bake at 180'c for about 20 mins.
(6) leave cool before serving.

Millet was first introduced to me by Divina @ Sense & Serendipity. Divina is now teaching at the International Culinary Art Academy of Cebu, Philippine. Since then, I have started taking boiled rice form millet. They are so tasty and aromatic. I even used millet in my Chinese Rice Dumpling. Simply yummy! And these gluten-free millet muffins look terrific as well and tasted extreme wonderful because of the key lime juice I've added in. Plus the addition of nutmeg.... they are my superstar! Hope you guys will like it too.

My Fake Shepherd Pie

I'm here to announce that I've failed to go on to the next Project Food Blogger challenge but it's fine with me. I am really proud of myself at least I've tried. Besides of that I'm truly HAPPY because I have a bunch of great friends and supporters around me. I think this is the greatest gift. These are the things that money can't buy! In return, I'm going to give everyone a good & comforting treat. haha...

It's my fake Shepherd pie! Why I called it a fake Shepherd pie? Shepherd pie is a classic English pie which is very rich in flavour and it must be cooked with either beef or lamb. I can imagine the aroma of those beefy and lamby smell that splash onto your face once you're digging in it. But as for a non-beef eater like me and my family, we will never be able to enjoy the real Shepherd pie. So, I make a fake one instead! haha....

And here's what I did.
Ingredients for base meat : (for 4 small pies)
300gm chicken thigh, minced
1 tspn chinese 5 spice
salt & pepper to taste
a dash of crashed black peppercorn
1 small can green beans
1 large onion, diced
3 tbsp red wine
2 tbsp tomato paste
1 tbsp flour
200ml chicken broth

Seasoning paste :
1 tspn curry powder
1/2 tspn turmeric powder
1/4 tspn cumin powder
1 tbsp water
(combine all to form a smooth paste)

Method :
(1) marinade minced chicken with salt & pepper, 5 spice and crashed black peppercorn.
(for about 1/2 hour)
(2) preheat frying pan with butter, saute diced onion untill fragrant.
(3) add in green beans and continue saute for about one minute.
(4) stir in seasoning paste and saute untill fragrant.
(5) add in marinated meat and continue cooking for another 5 minutes.
(6) stir in red wine, tomato puree and a dash of Worcester sauce, simmer untill everything is well combined.
(7) add in chicken broth and let it simmer untill thicken.
(if you prefer juicier base, just reduce the simmering time)
(8) off the heat, then add in flour and mix well.

Ingredients for potato topping :
500gm potatoes, cubed
100ml milk
50gm butter
a dash of salt

Method :
(1) boil potatoes untill soft & tender.
(2) off the heat, drained and mashed the potatoes while it's still hot.
(3) stir in butter & milk untill well mixed and smooth.
(4) place the mashed potatoes into piping bag.

To Assemble :
(1) fill in ramekins with cooked chicken meat about 80% full.
(2) then cover the top with mashed potatoes.
(3) sprinkle a dash of Parmesan cheese and bake at 190'C for about 30mins or untill slightly brown.
I know I don't have to use chicken meat in this recipe. I have other choices like turkey meat or duck meat but the thing is I don't buy a whole turkey or duck just to get the meat. One turkey will probably cost me about RM$100! You know what I mean! Our local market don't sell separate meats for duck and turkey.
I have tried the common Shepherd pie recipe with chicken meat but that is not what I want. Chicken meat basically is very plain & less flavour compare to other meat. I want something strong! ^_^ So, I decided to use Chinese 5 spice and a little curry mixture in this recipe and not over powering the flavour at the same time.
I think the colour looks perfect! It has much stronger flavour compare to other chicken Shepherd pie and it smell great as well. I am truly satisfied with the result. And hope whoever try this will like it too.

Pink Lady Soda & Bloody Coke Mocktail

I'm so envy whenever people started talking about Bloody Mary recipes over their site. Always sound so sexy! Too bad, I'm not the kind of person that can go along well with alcohol. I can just drop dead even after a few sips! Very dangerous, right? So coincidence that there's one time I came across a review about this drink, dragon fruit coca-cola! And I'm in love with it immediately.

And here's what I did.

Ingredients for Bloody Coke Mocktail :

100gm red dragon fruit, cubed
200ml coca-cola soft drink
some ice cubes

Method :
Blend together red dragon fruits and coca-cola untill well mix, fill in a glass with some ice cubes then pour in the mixture.And serve chilled.

After that I even trying it with cream soda. Gosh, this is even marvellous! So, I've given it a name called Pink Lady Soda Cocktail! And from that day onwards Bloody Coke & Pink Lady became sisters. ^_^ I'm sure you will falling in love with both sisters too! Enjoy & have fun.

Ingredients for Pink Lady Soda Mocktail :

100gm red dragon fruit, cubed
200ml cream soda soft drinks
some ice cubes

- blend together dragon fruit and cream soda untill well mixed.
- fill in the glass with some ice cubes, then pour in the mixture.
- and serve chilled.

Bamboo Charcoal & Cinnamon Mooncakes And It's Voting Time

This year the Chinese Mooncake Festival is fall on the 22nd of September, Wednesday. And it's about time to make my third batch of mooncakes. Remember the mooncake biscuits I made the other day. It's all gone! This morning, I went for more lotus paste fillings but the store owner said there's no more stock left. Luckily, I still have 3kg left with me. So, just make whatever I have in hand.
I'm glad I'm making my homemade golden syrup this year. The process is actually pretty easy. Probably, I'll try to make the lavender golden syrup next as well. And here's the recipes. Have fun!
Ingredients for Golden Syrup :
100ml lemon juice
450ml water
1 kg sugar
Method :
- combine water and sugar in a non-stick pot and boil over high heat.
- once it's boiled, add in lemon juice and let it boil for another 5 mins.
- at this moment, do not try to scrub the side of the pot with your cooking utensil, cause the sugar might cystalize at the side. You may use a damp cloth for the cleaning.
- finally, reduce to low heat and simmer for about an hour (do not stir the mixture).
- mine is exactly 1hour 10mins, the syrup looks very runny while it's hot but will became thick after cooling down.
- if you prefer to omit the lemon juice, you may as well cut down the simmering time.

Ingredients for Charcoal Mooncake Skin :
(for 12pcs mini size mooncakes)

100gm all purpose flour
1 tspn bamboo charcoal powder
1 tbsp milk powder
75gm syrup
1/4 tspn alkaline water
25gm peanut oil
(combine all ingredients and mix well, then leave aside for 2 hour or the best is overnight)

Ingredients for Cinnamon Mooncake Skin :
(for 12pcs mini size mooncake)

100gm all purpose flour
1 tspn cinnamon powder
1 tbsp milk powder
75gm syrup
1/4 tspn alkaline water
25gm peanut oil
(comine all ingredient and mix well, then leave aside for 2 hour or the best is overnight)

Fillings : about 1-1/2 kg lotus paste.
*Egg glze : 1 egg yolk mix with 1 tspn water
*mung fillings : refer here.

To Assemble : refer here.

Finally, bake at 170-175'c for 10 mins and then brush with egg glaze, bake again at 160'c for another 10 mins or untill brown.

I must say My Little Space is a place for me to make my fantasies come true. It's like a wonderland filled with candy, cookies, cakes, sweets and desserts. This is the place where I can turn my imagination into reality. All I need is to put my hands and mind into action to make it happen.

From simple white flour.......

Into something luscious .... to colour your life with a happy face!

I started blogging since March 2009. My aim is to record down the journey in my kitchen. But in reality, food blogging is not just about food. Food blogging is about everything; the people, connection, friendship, religious and respect to other cultural food. I am lucky because I am living in a multiracial country and that's the biggest opportunity for me to learn various cooking here. Yet, there's still not enough! My biggest aim is to master my skill in pastry & bread making. I am no professional baker nor cook. I'm just a common homemaker like everyone else. I am always lack of proper working gadgets and resources of ingredients. However, that doesn't stopped me from what I'm doing. I am grateful and honoured to have such a bunch of helpful & wonderful blogger buddies of mine from all over the world and thankful for their generous gifts and ingredients to help me along the way. The improvement I've made within a year time. I think that's the most amazing thing I've ever done.

For me, Project Food Blog Challenge is like the key to my dream and fantasy. I'm not sure if you're willing to be the one to turn Pinocchio into a real boy or a poor little girl into Cinderella! But right now, I am very much looking forward to your votes!

This post is a special dedication to Roxanna. I'm sure whoever from Foodbuzz should know her very well. I remember when I first started blogging I know nothing at all. I don't even know how to link a site.... like a dummy! haha... Yes, this is the truth! I have to be thankful to all my blogger buddies for their encouragement and sincerity. They have been so supportive and helpful all along. And today I would like to offer to do the photography job for Roxanna. I met Roxanna more than a year ago from FB. She's a very friendly and funny lady. She doesn't even owned a blog. But recently, she started posting some lovely recipes at FB site without any photos. And I have her permission to do this special project for her and post it on my blog. Roxanna will be using these photos at her FB site soon.

Here's her recipes.

Ingredients for Oatmeal Cake :
1-1/4 cup boiling water
1 cup quick oat
120gm butter, softened
2 eggs
1-1/2 cup flour
1 tspn baking soda
1 cup sugar (I used 1/2 cup)
1 cup brown sugar
1 tspn vanilla extract
1/2 tspn salt
1 tspn cinnamon powder
1/2 tspn nutmeg powder

Method :
- combine quick oat & boiling together and leave to soak for 20mins.
- beat butter and both sugar untill fluffy, then stir in eggs & vanilla exract.
- add in soaked quick oat into the batter and mix well.
- then slowly fold in flour, cinnamon powder, nutmeg powder and baking soda.
- I used three mini (11x6x8cm) trays.
- finally, bake at 170-175'c for about an hour.
- leave cool completely before slicing.

I only used half of her recipe and can feed my family for two days. The cake is so fluffy & tasty. I love especially the chewy texture from the oatmeal. Beautiful!

I'm having this with hazelnut & peanut butter spread! *_*

Ingredients for Crispy Lemon Fried Chicken :
800gm chicken, chopped
3-1/2 tspn salt
1 lemon rind
1 lemon juice
1 cup flour
1/8 tspn pepper
1 tspn paprika (I added in additional 1/2 tspn cayenne pepper)
2 tbsp water
Cooking oil for deep frying

Method :
- marinade chopped chicken meat with all the ingredients and leave aside for an hour.
- then deep fry the chicken untill cooked or brown.
- finally, decorate the fried chicken with lemon rind.

The fried chicken is so fragrant and tasty. I love the strong lemony flavour. Another yummy recipe, Roxanna! Well done!
