Muffins For The Teachers

My son just celebrated his school Teacher's Day. I've made some muffins and steamed Fatt Kuih for him to bring back to school. The muffins as shown in the picture are lemon chocolate chip muffins and mocha muffins.

Ingredients for mocha muffins :

230gm all purpose flour
1 tbsp baking powder
1 tspn salt
125gm butter, melted
2 eggs
145ml milk
2 tspn mocha flavour 3 in 1 coffee powder (mix with a little water)
some chocolate chips

- add all ingredients together and mix well.
- scoop the mixture into muffin cups and add in some chocolate chips on top.
- then bake at 185'c for 25mins.

And these are the steamed Fatt Kuih I made for my son. Not forget to wish all the teachers *HAPPY TEACHER'S DAY*

Black Forest Bun

Ingredients :

1/2 cup warm water
1/4 cup warm milk
1/4 cup butter, melted
1/2 cup sugar
1 eggs
1 tspn salt
2 tspn yeast
1-1/2 cups all purpose flour
1-1/2 cups bread flour

Methods :

- combine all ingredients together in the bread machine and select basic dough setting.
- once the dough is set, leave it to rest in a big bowl for 1-1/2 hour.

Fillings :

1 cup blueberry jam
2 cups chocolate cake crumbled

- press the dough for several times to let the air out.
- and slightly knead the dough for 5 mins.
- then place the dough onto a floured surface and roll flat.
- spread jam onto the dough and sprinkle on the chocolate cake crumbled.
- then roll it up like a swiss roll.
- divide them and place them onto a tray.
- let them rest for 15-30 mins.
- brush on the egg glazing.
- finally, bake at 185'c for 25-30 mins.

I'm using both muffin tray and flat tray. And both of them look gorgeous, isn't it?

Sticky Glutinous Rice

In Thailand, sticky glutinous rice normally will serve with mango and coconut milk. But in Malaysia, mostly will use sticky glutinous rice to make 'Pulut Tekan' and will serve with kaya jam. 'Pulut Tekan' also meaning as press glutinous rice. For me, I always looking for an easy way to make things simple as possible. So, this is what happened!

Ingredients :

200gm glutinous rice (washed and soaked for 3-4 hours)
100ml water
90ml coconut milk (santan)
1/4 tspn salt
1/4 tspn pandan essence

Method :

- combined all ingredients in a tray.
- then steam for 15 mins or untill cooked.
- add in a few drops of green colouring and stir to mix 1/3 of the rice.
- leave to slightly cool.
- and wrap it with small plastic bags.

- cut open one side of the plastic bag.
- place in some rice and slightly press it down.
- then seal wrap the bag.

- the wrapping is almost done.

These little sticky glutinous rice are more easier to handle when serve.

My Little Orchids' Corner

The weather turns really hot lately. I'm really worried about my orchids, did not know if they'll able to survive throughout this season. So, I decided to take down some of the pictures as shown below. As I am staying at upper floor, space is always limited. Yet, I'm still trying my best to plant all these orchids at the back of the house.

This yellow twist orchid (have no idea what's the species) is the longest lasting one. It can stand for about 2 months plus. And then the followings are the one I've planted at the ground floor.

Actually, there are still about 10 species of my orchids not included in here. Have to wait for them to bloom !

Mango Salad

Ingredients :

1 small size half raw mango
1 cucumber
1 big onion
some chilli padi

- cut all ingredients into thin shreds and put them into a large bowl.

Seasoning :

1 tspn fish sauce
1/2 tspn sesame oil
1 tspn vinegar
2 tbsp sugar
2 tbsp lime/lemon juice

- mix all ingredients together.
- add it to the mango mixture and stir well.
- then serve.

Friday Dinner Set

Well, here's my Friday Set Dinner. Just a simple one! I've cook some fragrant rice with spices, prepared some mango salad, some fresh lettuce and chicken chop. What I like about is the rice. I actually cook the rice with some spices and butter. Believe me, you can finish the whole lot of it ! Here's the ingredients for it.

2 cups rice, washed

some water

1 tbsp cooking oil

1 tbsp butter

1/8 tspn salt

2 cinnamon sticks

1 star anise

2 cardamons

2 ginger slices

- put rice, ginger slices, salt and water together into the rice cooker, and start cooking.

- then put cooking oil, butter, cinnamon sticks, star anise, cardamons in a saucepan.

- slightly simmer the spices untill fragrant.

- pour the spices into the rice cooker and slightly stir the rice.

- done.

Marmalade Brioche Croissant

Croissant is something I always wanted to go for but this round I wanted to start with brioche first. Brioche croissant isn't actual a 'C' family member, yet still looks fantastic without the layering though. The making of it as simple as 1 2 3... and it came out looking great ! Just love it !

Ingredients :

3/4 cup milk
1/4 cup sugar
4 eggs
4 cups bread flour
1 tbsp yeast
1-1/2tspn salt

- add all ingredients together to form a soft and sticky dough.
- add a little more flour if its too difficult to handle.

200gm butter, softened
some marmalade jam (from St Dalfour)

- add butter into the the dough little by little untill combine.
- then place the dough onto a plastic wrapper and keep in fridge for overnight.

- place the dough onto a slightly floured surface and cut into 2.
- keep one portion back to the fridge.
- roll the dough out into round shape and divide them as shown in the pictures.
- place a teaspoon of marmalade jam onto each portion.
- and roll them up as shown here, slightly strech the edge of the side.
- place them onto a baking tray.

- final touch up, brush on the egg glazing and leave to stand for 15-30 mins.

- bake them at 185'c to 190'c for 20mins.

Apple Shortbread Slice

There's a new cafe house opened up in my town last weekend. I went there with my kids. They served quite a number of food, deserts and drinks. Yet, not what I expected! However, it's a nice place to hang out with friends. So, I've made some apple slices for my own satisfaction.

Ingredients :

(A) Apple Filling

5 green apples, cut in small
4 tbsp brown sugar
1/2 cup raisins
2 tbsp all purpose flour
2 tbsp lemon/orange juice
1 tspn cinnamon powder

- mix all ingredients (except flour) in a sauce pan.
- and cook under low heat untill the apples became soft.
- then off the heat and add in flour for thickening.
- leave aside.

(A) Base

2 cups all purpose flour
2 tbsp corn starch
1/4 tspn salt
190gm butter
1/3 cup brown sugar
1 tspn vanilla essence

- cream butter and sugar untill well combine.
- add in all ingredients and stir till well mix.
- press 2/3 of the mixture to a 9"tray.
- spread the apple filling over the base.
- then top with the 1/3 balance shortbread mixture.
- bake at 185'c for 30 mins.

- cut the slices only when it's cool.

Hazelnut Coffee Swirl Loaf

I wanted to add a little flavour into this bread. So this is the result. Fantastic aroma!

Ingredients :

300gm bread flour
50gm all purpose flour
1-1/2 tspn yeast
2 tbsp sugar
3/4 tspn salt
150ml full cream milk
1 egg white

- mix all ingredients together and select the basic dough setting for bread machine user.

Hazelnut Coffee Paste :

1 pkt 3 in 1 white coffee mix (cappuccino)
2 tbsp all purpose
2 tbsp water (adjustable)
1 tbsp ground hazelnut

- add all ingredients together to form a paste.
- place in fridge for 1/2 hour or less, make sure it's not too hard for spreading .

Method :
- place the bread dough onto a slightly floured surface.
- roll flat and then spread the paste onto it.
- then follow the pastry folding process.
- once it's done, place the dough into bread tray.
- leave to prove for 1 to 1-1/2hour.
- then bake at 180'c for 35-40 mins.

Caramel Coconut Slice

These few days my room temperature is about 30-34'c. It's really hot out there. I tried not to make something heavy to eat. So, I've made some slices.

Ingredients :

(A) Base

1 cup self-raising flour
1 cup desiccated coconut
3/4 cup brown sugar
125gm butter (melted)

- combine all ingredients together untill well mix.
- press mixture over base of 20cm x 30cm lamington pan.
- bake in 180'c for 15mins.

(B) Filling

1 can sweetened condensed milk
(about 400gm)
1 tbsp butter

- combine ingredients together in a small sauce pan.
- stir over heat without boiling for 15mins.
- pour the hot filling over hot base and then return to oven for 10 mins.
- leave cool.

(C) Topping

250gm white chocolate (or one bar)
1 tbsp butter

- combine chocolate and butter in small sauce pan.
- stir over low heat untill smooth.
- spread warm topping over filling and leave to set.

I have actually cut down the sugar in this recipe.The lower sugar level the better!

Danish Pastry

I am so happy today because I really did a wonderful job on this pastry. This is actually my very first attempt on danish pastry and I'm glad I made it. On my mind, I always thought that danish pastry should be very difficult to make cause of the long period of folding process. Well, it is not at all !!! I found a homemade recipe from a french blog and then I followed the folding process from here.

Ingredients for pastry dough :
1 tbsp yeast
1/2 cup milk
1/3 cup sugar
1-1/2 tspn vanilla essence
2 egg
1/4 cup orange/lemon juice
some orange/lemon zest
1 tspn salt
(add all ingredients together and mix well.)

4 cups all purpose flour
(slowly add flour into the (A) mixture untill form a soft dough. Add more flour if it is too hard to handle.Then place the dough to the fridge for 30 mins. I kept in the freezer.)

400gm butter
3 tbsp all purpose flour
(now, you can start the folding process as I recommended. After the final folding, keep the dough in the fridge for overnight.)

I only used half of the pastry dough and keeping the other half in my freezer for next week. Now, roll out the dough into desired sizes and shape them.

I added in some green apples mixture (4 green apples cut small + 1/2 cup raisins + 2 tspn cinnamon powder + 2 tbsp brown sugar), on mine. Let the pastry dough stand for about 30mins or more before baking. Brush with egg glaze (1 egg yolk + 1 tspn water).

Then bake at preheated oven 190-200'c for 20 mins or untill golden brown.

I'm using this St.Dalfour jam for topping. I can tell you this is absolutely a delicious product from France. No additional sugar added in and is high fruit content.

Finally, sprinkle icing sugar on top and serve.

Moist Chocolate Cake

Yesterday my son was requesting for cakes. So, I went through my own recipe book and wanted to go for this moist chocolate cake with cream cheese frosting. I love cream cheese frosting. It is easily go with anything from carrot cake, banana cake, zucchini muffin and cupcakes.

Ingredients :

2 cups superfine flour
1-1/2 cups sugar
3/4 cups cocoa powder
2 tspn baking powder
2 eggs
1 tspn salt
1 cup milk
1 cup oil
1-1/2 tspn vanilla essence
1 cup hot water

Method :

- add all ingredients together and mix till well combine.
- preheat oven and place a piece of parchment paper onto a 9" baking tray.
- bake at 180'c for 45mins.
- cut the cake into 12 pcs, once its cool

Cream Cheese Frosting :

150gm cream cheese
60gm icing sugar
2 tbsp lemon juice
2 tbsp lemon concentrate liquid
2 tspn lemon zest

- beat all ingredients together untill smooth.
- then put a spoonful frosting onto each slice of cakes and serve.

Ayam Masak Lemak

This is what we called Seremban (Negeri Sembilan State) style Ayam Masak Lemak with bird eye chilies. This recipe was actually given by my husband's Malay sister-in-law. She is a very nice lady. She just moved over to Sarawak with my husband's elder sibling a year ago. Anyway, the following is how the recipe works.

Ingredients :

1/2 whole chicken (cut in small pce)
3 tbsp tumeric powder
1 tspn kurma powder
400ml thick coconut milk (santan)
3 tspn salt
3 lemon grass (clean & cut in 2)
1 fresh tumeric leaf
200gm ginger
3 big onion
100gm chilli padi

Method :

- marinade the chicken with tumeric powder, leave aside.
- blend together ginger, onion and chilli padi, leave aside.
- slice the tumeric leaf, leave aside.
- heat up the wok/pan and add in 41/2tbsp of cooking oil.
- firstly, fry the lemon grass untill fragrant.
- add in the blended mixture and stir fry for 5 mins.
- then add in the marinade chicken.

- stir fry the chicken in medium heat for 5 mins and add in the kurma powder.
- continue stirring untill the meat became a little dry and aromatic.
- now, add in the coconut milk and cook in medium heat for 10 mins.
- then switch to low heat and cover the wok/pan by lid.
- let it cook for about 45 mins to 1 hour.
- need to stir the meat every 5 mins.
- finally, the gravy became thick and about to dry but not dry up.
- add in salt & tumeric leaf and stir for 5 mins, then serve.
This is truely an amazing dish! My family just love having this with rice and hard boiled eggs.
